HEE JOY signs an exceptional vintage, 2005, on the very beautiful territory from Trinidad originating from TDL distillers. This rum is distilled in a 4 column stills then aged in American oak barrels for 13 years. After a short passage in aged cognac cask, it is then reduced and botteld in the Hee Joy cellars, in Chevanceaux, in Charente Maritime. A very beautiful signature of the master rum makers of the Island of Trinidad, enhanced by the know-how of the Hedonits Spirits house. A complex rum on freshness, which develops aromas of honey, candied fruit and citrus.

Initial Aging:
13 years in American oak barrels.
Secondary Aging:
Six months (depending on the weather) in old XO cognac barrels.
This final aging takes place in the Hee Joy cellars in Chevanceaux in Charente Maritime.
Tasting notes:
Color: brown with light golden reflections
Nose: citrus fruits, spices, fresh bananas.
Palate: honeyed attack, mid-palate on a smooth caramel, the freshness of peppermint allows citrus fruits to fully express themselves.
Overall: subtly warm coated with exoticism where the coconut melts.
