The Ferroni Brut de Fût Canaries La Palma 2013 is a pure cane juice rum distilled in pot-still and column, then aged for eight years in barrels of wine from the Canary Islands (Malvoie) in American oak in the Canary Islands, followed by a second aging in Provence for three years in French barrels (ex-Cognac, ex-rum).
The first aging is tropical: hot, humid, without major temperature variations.
The second aging is Mediterranean: very hot and dry summers, with cold winters. The thermal amplitudes are important. This aging accelerates the maturation of rums as much as in a tropical climate, with an often higher share of angels.

TASTING NOTE
Color: Very dark with ruby reflections
Nose: A very original, vanilla nose, roasted almonds with aromas of currants and grape jam. Finally, some traces of underwood perfumes.
Mouth: The attack is very flexible, always very original, in perfect harmony with the nose. It is vanilla and very marked by notes of leather, grape and rancio. The finish is very long in continuity with the mouth.
