A true “Spirit of rum”, the Perle Fine is the result of exceptional cellar work. Double distilled from fresh cane juice in a copper still, it is served raw and without reduction.
The remarkable plots of Madame Joseph Sylvestre and Monsieur Paul Octave de Ducos et du Saint-Esprit have been selected for this 2021 harvest
Cut by hand, the canes are pressed only once. After a long fermentation (5 to 7 days), the vesou is distilled twice several days apart.
Subtle and elegant, the Perle Fine is tasted at 67.5%, its natural degree.

Description
La Perle Fine is adorned with a brilliant and limpid robe.
The expressive and rich nose welcomes us with floral, fruity and freshly squeezed cane juice notes before evolving towards spicy notes.
On the palate, the attack is soft and unctuous. We are swept away by flavors of linden, sugar cane, pear and citrus.
A very round rum which brings us a beautiful length rich in aromas.
An elegant and balanced eau-de-vie that keeps all the promises of an extraordinary cuvée.
