Distillery Indochina is nestled in a privileged natural environment were the production conditions are perfect.
The local sugar cane variety, is renowned for its high quality and aromatic properties.
The sugar cane fields are cultivated using traditional methods and excluding the use of any pesticides or chemicals.
The canes are exclusively harvested by hand and are delivered within 12 hours at the Distillery.
The fermentation process takes between 72 to 96h.
Distillation happens in a column still with the output reaching up to a 70%ABV maximum.
The distillate then rests in stainless steel vats for a 7 month period, allowing a slow drip reduction with purified water.
